2007년 26살의 어린 나이에 프랑스 제빵(Boulangerie) 명장 즉, MOF 자리에 단 한번에 올랐다. 토마 마리는 6살 때부터 아버지의 빵 가게에서 오랜 시간을 보내면 자연스럽게 제빵사의 꿈을 키웠다. 프랑스 루앙의 INBP에서 CAP, BEP, BM을 모두 취득하고 프랑스와 외국의 여러 학교에서 제빵을 가르쳤다. 2005년에는 프랑스 제빵 대회 빵 부문 1위, 2006년 유럽 제빵 대회 2위를 차지하기도 했다. 현재 INBP 강사이자 스위스 로잔호텔학교에서 부교수직을 맡으며 제빵을 가르치고 있다. MOF란? 프랑스 최고 장인(Meilleur ouvrier de France)의 약자이다. MOF 선발대회는 3~4년에 한 번씩 치뤄지면 요리, 제빵, 제과, 건축, 음악, 미용, 농업 등 17개의 카테고리, 137개의 세부 분야로 나누어져 있다. 제빵 분야는 1933년부터 선발이 이루어졌으며 현재까지 150여 명의 MOF만 등록되어 있을 정도로 MOF가 되는 일은 어렵다.
