피에르 가니에르 (지은이) 정보 더보기

프랑스 1950년 출생. 20세에 요리에 대한 아무런 열정 없이 부모가 운영하는 레스토랑의 셰프로 일을 시작했다. 아버지와 심한 갈등으로 결별한 후 30세에 생-테티엔에서 자신의 첫 번째 레스토랑을 개업했다. 1992년에 인근의 다른 건물로 이전했고, 이듬해 미슐랭 3스타를 얻으면서 전 세계에 이름을 알렸다. 1996년 레스토랑이 파산하면서 생-테티엔을 떠나 파리 발자크 거리에 정착하게 되었고, 1998년 미슐랭 3스타를 되찾는다. 이후 현재까지 미슐랭 3스타를 유지하면서 현존 세계 최고의 그랑 셰프 중 한 명으로서 파리와 전 세계에 있는 그의 레스토랑에서 미학적 요리의 혁신을 멈추지 않고 있다.

물리화학자, 프랑스 국립 농업연구소(INRA) 연구원, 과학음식문화재단 과학책임자, 프랑스 농업아카데미 회원. ‘요리 분자학의 아버지’라는 별칭과 함께 25년간 음식과학연구에 전념하며, 세계적으로 명성이 자자한 페랑 아드리아 모토, 위리 뒤프렌느 등과 같은 요리사들에게 많은 영향을 주었다. 요즘도 콜레주 드 프랑스 연구소에서 음식으로 배우는 과학프로그램을 진행하며, <과학을 위하여>의 자문위원으로 ‘과학과 미식’ 칼럼을 연재하고 있다. 저서로『냄비의 비밀』,『요리, 그것은 사랑이자 예술이자 과학이다』,『화덕의 연금술사』 등이 있다.
